Since there is water and moisture inside the egg, the more it is in the refrigerator, the more the product dehydrates. As this happens, the membrane lags behind the shell, and the air begins to fill the entire space. A long-lived egg contains only air, there is no moisture in it at all, and a dehydrated yolk is formed inside.

The buoyancy test measures the fullness of the air pocket inside the product. Usually, the egg is dipped into a glass that is filled with water. Eggs that are full of moisture and water will sink to the bottom of the glass or lie on their side. Old dehydrated eggs will always float on the surface.
